Mediterranean Tuna Melt

Total time: 30 minutes


1 4.5 oz. water-packed tuna

¼ cup minced celery

¼ cup minced onion

¼ cup chopped fresh spinach

¼ cup grated carrot

1 tb. light mayonnaise

1 tsp red wine vinegar

Iodized salt and pepper

2 slices firm tomato

2 slices 2% low fat cheddar cheese

2 slices whole wheat or 5 grain bread

Oil spray


  1. Combine tuna and all ingredients except bread, tomato and cheese

  2. Heat a large skillet pan over low heat

  3. Spray skillet with oil and place two slices of bread on top

  4. Top bread with cheese than tuna salad and tomato. Cook on low heat until cheese melts and bread gets toasty.

  5. Serve immediately.
